New Champagne Brunch at BLT American Brasserie

Bottomless Bubbly with Egg & Brunch Entrees

Saturdays and Sundays

11:30 a.m. – 3:00 p.m.

$26 per person

BLT American Brasserie will now offer a new, free-flowing bubbly option to their weekend brunch service.  Every Saturday and Sunday, brunch guests may choose one of the “Eggs & Brunch” entrees (outlined below) paired with one hour of unlimited flutes of champagne for $26 per person.


For those who prefer a bloody mary to bubbles, the restaurant offers three a la carte options including the BBQ Bloody Mary, Balsamic Bloody Mary and BLT Bloody Mary ($9 each).  Mimosas and Bellini cocktails are also available for $8 each.

Brunch is offered from 11:30 a.m. to 3:00 p.m.  Chef Laurent Tourondel’s complete brunch menu can be viewed at bltamericanbrasserie.com. Reservations are welcome, but not required.

Valentine’s Day at BLT American Brasserie

Three Course Menu for Annual Date Night Dinner

5:30 p.m. to 10:00 p.m.

$55 Prix Fixe Menu

BLT American Brasserie will welcome Valentine’s Day diners for a special date night dinner. Executive Chef Laurent Tourondel and Chef de Cuisine Aksel Theilkuhl have crafted a three course menu that will be offered on Tuesday, February 14 from 5:30 p.m. to 10:00 p.m. The dinner offers a choice of appetizer, entree and dessert for $55. Some of BLT’s special dishes include lobster bisque, roasted beet salad, grilled hangar steak, chili-rubbed salmon, organic chicken, chocolate-coconut marquise with rum ice cream and blood orange tart with wildflower honey.

Reservations are encouraged. The $55 menu does not include tax or gratuity.

Aksel Theilkuhl Appointed Chef de Cuisine of BLT American Brasserie

BLT American Brasserie, set to open in Chicago’s River North neighborhood this November, has appointed Aksel Theilkuhl as Chef de Cuisine. Theilkuhl will be executing and overseeing the distinct vision of Executive Chef/Proprietor Laurent Tourondel. Tourondel’s first restaurant in Chicago will offer a nightly dinner menu along with weekend brunch, served in a stylish, brasserie setting.

Chef Aksel Theilkuhl is a culinary school graduate of Johnson & Wales. Following his coursework in Miami, he spent nearly two years at the California Grill (a Walt Disney World signature restaurant) under the guidance of Executive Chef Jon State. He then served as Saucier for Ritz Carlton Grande Lakes Orlando, followed by a move to the Ritz Carlton in White Plains, New York. This position, as Chef de Partie, is where he first met and worked with Chef Laurent Tourondel on the opening of BLT Steak. Theilkuhl next became Sous Chef at BLT Market at the Ritz Carlton Central Park, followed by Chef de Cuisine at BLT Steak at the Ritz Carlton located in Charlotte, North Carolina. Most recently, Chef Aksel Theilkuhl served as Chef de Cuisine for the Stephen Starr Restaurant Group in Philadelphia.

Chef Theilkuhl is very excited about his new position at BLT American Brasserie in Chicago and the opportunity to again work alongside Chef Tourondel.
