redFLAME, set to open this December, will offer an unpretentious pizza experience in Chicago’s Clybourn Corridor neighborhood. The cozy and casual 60-seat pizzeria will incorporate a two step, two flame process into every 14-inch pie.
At redFLAME, the approach to preparing a great pizza is from the bottom up. Each pizza will be cooked twice: first, the dough is grilled. Then, the pizza is placed under a flame, concentrating the heat on the toppings.
There are over 15 pizzas to choose from on the menu, including both “red flame” (housemade red sauce, mozzarella and romano) and “white flame” (brushed with garlic oil, mozzarella, ricotta, romano cheese, oregano, basil and black pepper) selections. Highlights of the pizzeria menu include “The Big Mart” named after founder Marty Gallagher (house made sausage and pepperoni), “The Southside” (Italian beef with hot giardiniera and chili oil), “Pizza ala Rosalia” (pesto, artichoke hearts, shrimp and roasted garlic), “Wild Shrooms” (wild mushrooms, thyme and whipped roasted garlic goat cheese), “The Dakota” (chicken, rosemary and sliced potato) and “Prosciutto” (freshly sliced prosciutto, arugula and fresh mozzerella). redFLAME makes their dough, sauce, sausage, Italian beef and giardiniera in house and utilizes locally sourced products. Specialty pizzas will be introduced monthly and an herb garden will provide fragrant seasonings once the outdoor dining area (seats 20) opens in the Spring of 2011.
In addition to pizza, redFLAME will offer appetizers (mozzerella diablo, bruschetta trio), salads (mixed greens, ceasar, caprese), sandwiches (Italian beef, Mama’s meatball) and sweets (s’mores, chocolate and strawberry “pizza”).
A wine wall, holding over 500 bottles, will showcase the many approachable selections that pair perfectly with pizza. The wines by the bottle list will all be priced under $40 and a dozen or more will be offered below $20. Craft brews (eight on draft) will also be an important element, served from the century-old, original mahogany bar.
redFLAME will be open for dinner and drinks Tuesday-Thursday from 5:00pm-11:00pm and Friday 5:00pm-Midnight. Lunch, dinner and drinks are offered on Saturday from 12:00pm-Midnight and Sunday 12:00pm-10pm. Table reservations will be accepted for parties of six or larger. Complimentary parking is available after 7:00pm at the nearby PNC bank. Staying in? redFLAME will offer carry-out service for those who prefer pizza at home.
