Nacional 27 and ChicaGourmets present a five-course wine dinner featuring Chef Ruth Van Waerebeek and Concha y Toro Wines. An accomplished international chef and cookbook author from Belgium, Chef Ruth Van Waerebeek continues to inspire all with her vast culinary knowledge influenced by her adventurous travels to Africa, South America and the Caribbean. Her cuisine combines “New Latin” flavors and traditional French cooking concepts, creating dishes that are altogether fresh, flavorful, unusual and exotic.
The menu items by Chef Van Waerebeek find their perfect pair with the very distinct and revered wines of Concha y Toro from Chile. In 1883, Don Melchor de Concha y Toro and his wife, Dona Emiliana Subercaseaux, brought to Chile the noblest grapevines of the Bordeaux region of France, adhering to a winemaking philosophy based strongly on enhancing the distinctive characteristics of each original vineyard.

Salmon Tiradito with Casillero del Diablo Sauvignon Blanc
a “tiradito” is a variation of the ceviche, a popular and wonderful way of preparing fish and seafood in Chile
Chupe de Jaiva with Marques de Casa Concha Chardonnay
a smooth, creamy pie loaded with lump crab meat pieces and Creole vegetables, paprika peppers, tomato, corn, chili pepper and coriander
Parrillada of Beef Tenderloin with Marques de Casa Concha Cabernet
with three pimiento marinade, Parmesan shavings, bitter greens and whipped potatoes with truffle essence
Roquefort Cheesecake with Concha y Toro Late Harvest Sauvignon Blanc
with toasted walnuts on rye bread and mixed greens with walnut oil vinaigrette
