Join Executive Chef David DiGregorio and Candid Wines for a sustainable and local pre-Thanksgiving celebratory dinner featuring Bourbon Red Heritage Turkeys from Caveny Farm in Monticello, Illinois.
Guests will receive recipes for preparing a Thanksgiving Day feast at home, and will have the opportunity to pre-order their own Thanksgiving Day free-range Heritage turkey.
The evening will begin at 6:30pm with a brief reception followed by a four course, family-style seated dinner with wine pairings at 7:00pm.

Bourbon Red Turkeys follow nature’s cycle. Eggs hatch in early April, poults grow during the summer on pasture with supplemental high protein feed and the birds mature on pasture and corn as the days grow shorter becoming naturally juicy and rich tasting. This process produces only one crop per year; harvest coincides with Thanksgiving and Christmas. Caveny Farm Bourbon Red turkeys are a natural product.
Caveny Farm raises poultry and lamb. Heritage breeds of turkeys, ducks and geese are our mainstay. Our birds are raised in pastures that grow grasses, clovers and amaranth. All of our poultry are fed custom formulated feed to compliment the nutrients found in our pastures. Corn, soybeans and soybean meal along with vitamins and minerals are the only ingredients in our feed. We are proud to be part of the Slow Food movement which believes pleasure and quality in everyday life can be achieved by slowing down and celebrating the diversity of the earth’s bounty.
